Fresh coconut flesh provides iron, potassium, protein, and 346 calories per 3.5 ounce serving. The coconut contains saturated fat, quite unusual for fruits and vegetables. Dessicated coconut contains about 60 to 70% coconut oil. Some people think that coconuts are very healthy to eat and others think they are bad.

RECIPES - Burfis  

Burfi is prepared during festivals in Indian homes. They are famous all over India. Here are some of the many Indian dishes. 

Coconut Burfi  

250 gms. finely grated coconut, 250 gms. sugar, 150 ml. water, ghee for greasing plate

Prepare syrup with sugar and water to 2-3 thread consistency. Warm coconut in heavy saucepan, pour in the syrup. Stir well and cook till soft lump forms. Spread in a greased plate. Cool. Sprinkle cardamom powder (optional). Cut into squares, store in airtight container.

Milk and Coconut Burfi  

Finely grated coconut - 3/4 cup, 1 litre milk, 1 cup sugar chopped nuts for topping (pista, almonds), silver foil (optional), Pure Ghee - 3 to 4 Tblsp.

Heat milk in a heavy Kadai till it is reduced to half its volume. Add coconut, sugar and stir till it becomes thick. Add ghee when it sticks tothe bottom. When it reaches burfi stage, the mixture turns golden and becomes frothy. Add the toppings and pour on a greased tray and cut it into squares.

What is Coconut cream

Coconut cream is an infusion of shredded coconut and water. Coconut cream may also be made with milk to make it richer.

Coconut cream is very similar to coconut milk but contains less water. The difference is mainly consistency. It has a thicker, paste-like consistency, while coconut milk is generally a liquid.

Creamed coconut is not the same as coconut cream. Creamed coconut is a very concentrated coconut extract without the water. Like coconut oil, it is hard at low room temperature. It is basically coconut cream concentrate, and is made into coconut cream by mixing it with water, or into coconut milk by mixing it with a larger amount of water. it is available in Asian convenience stores and in the Asian sections of large supermarkets.

Coconut cream can be made by simmering 1 part shredded coconut with one part water or milk until frothy, then straining the mixture through a cheesecloth, squeezing out as much liquid as possible; this is coconut milk. The coconut milk is refrigerated and allowed to set. Coconut cream is the thick non-liquid part that separates and rises to the top of coconut milk.

Coconut cream is high in healthy medium chain fatty acids and is very rich in flavor.

Coconut cream is used in Piña Coladas, and its nonalcoholic variant Virgin Piña Coladas, and Bangladeshi cooks often add coconut cream

to rice to give it some flavor.
